What is the keto diet?

By now, you’ve probably heard of the keto diet and its popularity among a ton of fitness-minded people. This diet, known formally as the ketogenic diet, revolves around a daily intake of high fats, a moderate amount of proteins, and low carbs. The goal of the keto diet is to jumpstart a process known as ketosis, which tricks your body into burning fats instead of carbohydrates.

The diet is one of the most difficult to maintain but typically yields some of the fastest results. For this reason, the keto diet is extremely popular.

How can college students maintain a keto diet? 

Maintaining any kind of diet on a college student’s budget can be difficult, but not impossible. Finding keto friendly meals is no exception. The keto grocery list is only as complex as you make it and if you’re a meat lover, you won’t have a problem finding delicious culinary creations to enjoy. A great tip is to meal prep and eat in to save money. Bills from eating out constantly pile up and dining hall plans can be expensive. But, don’t be discouraged. There are plenty of ways to go keto without going broke. Here are some easy and fun recipes to create on a budget:

Keto Chicken Enchilada Bowl 

You will need:

  • 1 Roma tomato
  • Sour cream
  • Pickled Jalapenos
  • Shredded Cheddar Cheese
  • 1 Avocado
  • A four-ounce can of Green Chiles
  • 1 Onion
  • Water
  • Red Enchilada Sauce
  • Coconut Oil
  • Chicken Thighs
Step One: Melt two tablespoons of coconut oil in a pot. Once it’s hot enough, cook the chicken thighs until they turn light brown.
Step Two: Chop up an onion and prepare a 1/4 cup of it. Pour the enchilada sauce, water, chiles, and chopped onions into the pot. Turn the heat down to a simmer and cover the pot.
Step Three: Cook the chicken for 17 to 25 minutes, or until the meat feels tender and fully cooked at a temperature of at least 165 degrees.
Step Four: Once the chicken is cooked, chop or shred the meat and add it back into the pot. Allow the meat to simmer without a cover for 10 more minutes to marinate in all the flavor.
Step Five: Serve with toppings of your choosing, such as avocado, cheese, peppers, and sour cream.

Keto Western Omelet

You will need:

  • 6 eggs
  • Sour Cream
  • Salt and Pepper
  • Butter
  • Shredded Cheese
  • Onion
  • Green Bell Pepper
  • Diced Ham
Step One: Whisk eggs and two tablespoons of sour cream together in a bowl. Add salt and pepper.
Step Two: Mix in half of the shredded cheese and whisk together.
Step Three: Melt two ounces of butter in a pan on the medium heat setting. Once it’s melted, saute the ham and diced vegetables for two to three minutes.
Step Four: Pour the egg mixture into the frying pan and cook it until it’s almost firm.
Step Five: Turn down the heat after some time has passed. Spread the remaining shredded cheese on top of the omelet and fold it.

Italian Prosciutto Dish

You will need:

  • Fresh mozzarella cheese
  • Sliced prosciutto
  • Two tomatoes
  • Olive Oil
  • Ten green olives
  • Salt and Pepper
Step One: Slice up tomatoes and mozzarella cheese.
Step Two: Place slices tomatoes, mozzarella, prosciutto, and olives on a plate.
Step Three: Season with salt and pepper.
Step Four: Serve with olive oil and enjoy!

Stuffed Avocados 

You will need:

  • A pound of ground beef
  • 1 tbsp Chili Powder
  • Tomato Sauce
  • Three Avocados
  • Shredded Cheddar Cheese
  • Cherry Tomatoes
  • Shredded Lettuce
  • 1/2 tbsp Salt
  • 3/4 tsp Cumin
  • 1/2 tsp Dried Oregano
  • 1/4 tsp Garlic Powder
  • 1/4 tsp Onion Powder

Step One: Cook the ground beef in a saucepan over medium heat until it’s browned.

Step Two: Drain the grease from the saucepan and add all the seasonings and four ounces of tomato sauce. Stir and allow this to cook for three to four minutes.

Step Three: Slice the avocados into halves and remove the pits. Fill the crater with taco meat.

Step Four: Stuff the avocado with cheese, tomatoes, and shredded lettuce.
